     MISC - Mini Cheesecakes

Ingredients
1 1/3 cups graham cracker crumbs
1/3 cup sugar
1/3 cup butter or margarine, melted
3 packages (8oz) cream cheese, softened
1 can (14oz) sweetened condensed milk (NOT evaporated milk)
3 eggs
2 tsps. Vanilla
 

Instructions
Heat oven to 300 degrees. Paper-line muffin cups or spray with cooking spray.
Stir together crumbs, sugar and butter; press equal portions on bottom of prepared cups.
In large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk until smooth.
Add eggs and vanilla; mix well. Spoon batter into cups. Bake 20 minutes or until set. Cool; refrigerate.
