     Sweet & Sour Zucchini Salad

Ingredients
3/4 c sugar
1 tsp salt
1 tsp pepper
1/3 c oil
2/3 c cider vinegar
1/2 c white vinegar
1/4 c whole grain or Dijon mustard
8 c thinly sliced zucchini
1/2 diced bell pepper
 
1/2 c diced celery
1 cup sliced green onion (or thinly sliced white onion)
Instructions
In large bowl, whisk together the first 7 ingredients. Add in the vegetables. Stir to coat. Chill overnight or at least several hours.
You can add whatever veggies you have on hand - tomatoes, cucumbers, yellow squash, carrots, etc.
