Peel potatoes; grind and squeeze out liquid. Grind onions and add
to potatoes. mix onions. potatoes, ground beed, and pork, adding
pepper, salt, and allspice until well blended. stuff mixture into beef
casings that have been rinsed free of salt. place stuffed sausage in
water and simmer 1 hour. be sure to pierce each stuffed casing with
a fork. a teaspoon of salt and slices of onion may be added to water
if desired. Yield 10 lbs sausage. Note- have meat ground and mixed
at grocery store. this sausage freezes precooked. To rinse casings
before use, attach to faucet.
