     Blueberry Muffins

Ingredients
2 cups flour
1/3 cup sugar
1 tbsp baking powder
1/2 tsp grated lemon peel
1 cup skim milk
1/4 cup Egg Beaters
1/3 cup trans-fat free margarine, melted
3/4 cup fresh or frozen blueberries
1/2 cup flour
 
1/2 cup sugar
1/4 cup trans-fat free margarine, cold

Instructions
Grease or line muffin cups. In a large bowl combine flour, sugar, baking powder, and lemon peel; set aside. In a medium bowl, combine milk, Egg Beaters and melted margarine. Stir into flour mixture just until moistened; gently stir in blueberries. Spoon batter into muffin cups.
In a small bowl combine 1/2 cup flour, 1/2 cup sugar. Add 1/4 cup cold margarine and cut in with a pastry blender until mixture resembles coarse crumbs. Sprinkle crumbs over muffins.
Bake at 400 degrees for 15-18 minutes or until lightly browned.
Serving Suggestions
12 servings, each: 226 calories, 7 g fat, 1 g sat fat, 2 g poly fat, 3 g mono fat, 37 g carbohydrate, 1 g fiber, 4 g protein.
