     Herbed Whole-Wheat Couscous

Ingredients
3/4 cup reduced-sodium chicken broth
2 scallions, sliced
2 tbsp fresh parsley, chopped
1/2 cup whole wheat couscous
 

Instructions
Bring broth, scallions, and parsley to a boil in a small saucepan. Add couscous, return to a simmer, cover and remove from the heat. Let stand, covered, 5 minutes. Fluff with a fork before serving.
Serving Suggestions
2 servings (about 1/2 cup), each: 250 calories, 1 g fat, 47 g carb, 10 g protein, 8 g fiber, 57 mg sodium.
