     Eggs With Turkey Breakfast Sausage and Fruit

Ingredients
1 pound ground turkey
1 tablespoon pure maple syrup
1 teaspoon dried sage
1/2 teaspoon dried thyme
kosher salt and black pepper
1 tablespoon canola oil
8 large eggs
1 tablespoon unsalted butter
fruit, for serving
 

Instructions
Combine the turkey, maple syrup, sage, thyme, ½ teaspoon salt, and ¼ teaspoon pepper and form into eight 2½-inch patties. Heat the oil in a large skillet over medium-high heat. Add the patties and cook, turning once, until cooked through, 2 to 3 minutes per side; transfer to a plate. In a medium bowl, beat the eggs with ¼ teaspoon each salt and pepper. In a second large skillet, melt the butter over medium heat. Add the eggs and cook, stirring, until set but still soft, 2 to 3 minutes. Serve with the patties and fruit.
