24 oz beef tenderloin steaks, at least 1 inch thick (4 6-oz each)
Pinch salt
Pinch pepper
2 tsp oil
Instructions
Preheat oven to 500 degrees. Combine first nine ingredients in medium bowl.
Heat first amount of oil in large frying pan on medium-high. Sprinkle both sides of each steak with second amounts of salt and pepper. Add steaks to pan. Cook for about 1 minute per side until browned. Transfer to large plate. Spread potato mixture evenly on top of each steak.
Heat second amount of oil. Add steaks, potato-side down. Cook for about 1 minute until potato mixture is golden.
Transfer steaks, potato-side up, to greased baking sheet. Bake for 8-10 minutes until desired doneness.
