     Slow Roasted Spiced Chicken

Ingredients
2 cloves garlic, crushed
2 tsp. oregano
1 tsp. paprika
1 tsp. sea salt
1 unwaxed lemon, quartered
1 whole chicken (4 lbs.)
Homemade stock or spring water
Assorted vegetables - shallots, squash, fennel, garlic cloves, potatoes, celery, carrots, etc.
 

Instructions
In a small bowl, mix garlic, oregano, paprika, salt and 1 Tbsp. lemon juice. Rub mixture all over the outside of the bird. Stuff lemon quarters inside the bird. Place bird breast-side up in slow cooker. Add vegetables around bird and pour in enough stock to reach about 1-inch deep around chicken.
Cook for about 3 hours on low.
