     WILD BLACKBERRY PIE

Ingredients
1 9 inch baked PIE SHELL
FILLING-
4 -5 cups blackberries, small variety
1 cup - sugar (less)
3 T Cornstarch
dash of salt
1/2 pint whipping cream
1 T Sugar
 
Glaze for crust
½ tsp sugar and 1 T water

Instructions
Boil (microwave) sugar and water for 1- 1 1/2 min and reduce by half just before crust done. Brush on crust just as it comes out of oven to seal.
Put 2 cups- washed berries into saucepan and mash. Combine sugar, cornstarch and salt and add to mashed berries. Cook over medium heat until thick, stirring constantly.
Place remaining 2 cups of uncooked berries in pie shell. Sprinkle with 1 T sugar. Pour cooked berries over berries in pie shell. Refrigerate until cool . Top with whipped cream.
Unbeatable! This recipe can be used for other berries as well.
