3 lb small red potatoes, unpeeled, in 1.5 inch chunks
3 tbls olive oil
2 tbls cider vinegar
1 tbsp. fresh herbs (tarragon, dill, or parsley)
2 tbls. sour cream
2 tbls. mayonnaise
2 tbls. dijon mustard
2 green onions, sliced
1 tsp salt
1/2 tsp pepper
1/4 tsp celery seed (optional)
Instructions
Steam potatoes in large basket 15-18 minutes, until
fork tender. Let cool slightly. Meanwhile, in
large bowl, combine remaining ingredients. Add
potatoes and toss to combine. Serve potato salad
warm or at room temperature.
