Using wooden spoon, vigorously bruise the parsley
and mint leaves with gin in a cocktail shaker. Add
celery simple syrup (3/4 c each water and sugar,
simmered with 2 stalks coarsely chopped celery for
5 minutes, then strained and cooled).
Strain into two tall glasses filled with ice. Stir
1/2 c club soda into each glass.
