For the marinade- 1/4 cup packed light brown sugar 2 tablespoons apple cider vinegar 2 tablespoons minced onion 1 clove garlic, minced Kosher salt and freshly ground black pepper 2 4-to-5 pound racks pork spareribs
For the rub- 1/2 cup packed light brown sugar 1 tablespoon chili powder 1 tablespoon garlic powder 1 tablespoon onion powder 1 teaspoon celery salt 1 teaspoon celery seeds 1/4 teaspoon cayenne pepper Kosher salt and freshly ground black pepper
For the barbecue sauce- 2 tablespoons vegetable oil 3 cloves garlic, smashed 1/4 cup tomato paste 1 tablespoon chili powder 1 3/4 cups apple cider vinegar 1/4 cup molasses 2 tablespoons Worcestershire sauce 1 tablespoon honey 1 tablespoon mustard powder 2 teaspoons instant espresso powder Freshly ground black pepper 1/2 teaspoon cayenne pepper 1 cup ketchup 1 cup pineapple preserves 1/2 teaspoon liquid smoke
