Wash and cut zucchini in half (long ways) add all seasonings (however much/little preferred) top with cottage cheese. Slice cherry tomatoes in half and place on zucchini. Add more seasonings if desired.
Bake on 450 for 15-20 mins. Then broil on HI for 5-10 mins (OR UNTIL CHEESE IS GOLDEN AND BUBBLY) Be sure to check back frequently so it does not burn)
Serve with salsa or Texas Pete hot sauce!!
