     Chicken & Bok Choy Stir-Fry

Ingredients
4 boneless skinless chicken breasts, cut 1 inch cubes
4 cups chopped bok choy
1 tablespoon oil
1/4 cup soy sauce
1/4 cup barbeque sauce or teriyaki sauce
4 sliced green onions
 

Instructions
Heat oil in large skillet over medium-high heat. Season chicken with salt and pepper. Cook chicken through, 4 to 6 minutes. Transfer to plate. Add bok choy and 1/4 cup water. Cover and cook, 2 to 3 minutes. In small bowl, combine soy sauce, bbq sauce and onions. Add to skillet and bring to boil. Return chicken to skillet with bok choy, just heat through and Serve.
Serve with rice.
