Toss tomatoes with olive oil, salt and pepper. Roast at 375 for 20 – 30 minutes. Put in a bowl and add garlic, basil, balsamic vinegar and allow to marinate at least 30 minutes. Layer mozzarella, tomato mixture, and more fresh basil between 2 pieces of ciabatta bread. Grill for 3-5 minutes until golden brown.
