     Spinach and cheddar muffins

Ingredients
30g butter
1 onion
2 cloves garlic
chilli
350g (2 1/2 C) flour
2 1/2 tsp baking powder
salt, pepper
200g cheddar cheese, grated
250mL (1 C) milk
 
1 egg
130g spinach

Instructions
Preheat the oven to 170°C. Melt the butter over medium heat and cook the onion until soft. Add the garlic, chilli, and spinach. In a bowl stir the flour, baking powder, salt, pepper and cheddar. In another bowl, whisk the milk and egg together, then fold into the flour mixture with the fried mixture. The batter will be quite thick. Divide into twelve muffin-cases and bake for 35 minutes.
