     Chicken with penne in creamy tomato sauce

Ingredients
250g (~9 oz) penne pasta
1 tablespoon olive oil
1 small onion, finely chopped
1 clove garlic, crushed or finely chopped
250g boneless, skinless chicken breasts cut into thin strips
1 zucchini, sliced
1 red pepper, deseeded and cut into thin strips
175ml pasta sauce
170g can evaporated milk
 
salt and freshly ground black pepper
fresh basil, shredded
parmesan cheese shavings

Instructions
Cook the pasta in a pan of lightly salted boiling water, according to the pack instructions until it is 'al dente' (with a bite).
Meanwhile, heat the oil in a medium saucepan and saute the onion and garlic until softened. Add the chicken strips and cook until browned. Stir in the zucchini and red pepper and cook for 2-3 minutes.
Pour over the pasta and cook gently for 3 minutes. Stir in the evaporated milk and simmer very gently for 5 minutes (overheating will cause the sauce to split). Season to taste. Drain the pasta and stir into the sauce. Serve immediately with the shredded basil and Parmesan shavings.
