     PIE - Sweet Potatoe Pie

Ingredients
2 large or 3 medium sweet potatoes
1/2 cup (1 stick) butter or margarine, softened
1 cup granulated sugar
2 tbs firmly packed brown sugar
2/3 cup (a 5-oz) evaporated can of milk
2 large eggs, beaten
1 tsp vanilla extract
1 tsp lemon juice
1/8 tsp salt
 
1 tsp cinnamon
1/4 tsp nutmeg
2 (9in) unbaked pie shells

Instructions
Cook sweet potatoes in boiling water for 45 to 50 minutes or and until tender. Drain, cool slightly and peel.
Preheat oven to 425 degrees.
Mash warm sweet potatoes and butter in large bowl. Stir in granulated sugar, brown sugar, evaporated milk and eggs. Stir in lemon juice, vanilla, salt, cinnamon and nutmeg. Pour into prepared shells.
Bake for 15 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours.
