Combine the meat, tomatoe juice and spices in a large roast pan.
Cook in a 350 degree oven. for 2-3 hours. About 1 hr before it is done add the celery and carrots.
Note- the meat should be very tender.
Option- instead of cooking an entire roast whole you could cut it into large bite size pieces and cook more as a stew.
