Peel one medium size lemon (cut in paper thin slices). Mix dry ingredients with liquid ingredients plus water.
Brush bottom crust with half of saved egg white. Layer bottom crust with sliced lemons. (do not double layer). Pour dry/liquid mixture over lemons. Repeat lemon then mixture. Cover with upper crust. (Be sure upper crust has a few vent hole)
Brush top crust with remainder egg white. Sprinkle with sugar/cinnamon mixture.
Bake at 400 degrees for 5 minutes. Turn temperture to 350. Bake for 30 minutes or until top crust is brown.
