     Dijon Green Beans

Ingredients
1 - 1 1/2 lb of Trimmed Fresh Green Beans
2 Tbsp of Red Wine Vinegar
2 Tbsp of Olive Oil
2 Tsp of Dijon Mustard
1/2 Tsp of Salt
1/4 Tsp of Pepper
1 Cup of Grape Tomatoes (Halved)
1/2 a Small Red Onion (diced or thinly sliced)
2 Tbsp of Grated Parmesan Cheese
 

Instructions
Place beans in large saucepan and cover with water. Bring to the boil, cook uncovered for 8-10 minutes or until crisp crisp tender.
Meanwhile, whisk the vinegar, oil, mustard, salt, pepper in a bowl.
Drain beans; place in a large bowl. Add tomatoes and Onion. Then drizzle with dressing and toss to coat.
Sprinkle with Parmesan cheese.
