Combine salt, paprika, cayenne, onion powder, thyme, white pepper, garlic pwder and black pepper in a bowl and set aside
Remove neck and organs from chicken. Rinse chicken and pat dry with paper towels. Rub garlic all over the outside of the chicken, and put left over cloves inside the chicken. Rub the premade rub all over outside and inside of the chicken. Place lemon quarters inside the chicken.
Place onions, carrots and celery at the bottom of the slow cooker. Put chicken on top of the vegetables. Cook for 4-8 hours on low. A 4lb chicken takes about 6 hours.
Place chicken in a 9x13 pan and broil for 4-5 min. Let chicken rest for 5-10 minutes before serving.
