     Grilled Zucchini Artichoke Bites

Ingredients
2 lbs zucchini (2-3 large ones)
9 oz artichoke hearts, drained
zest of 1 lemon
1 tbsp lemon juice
2 cloves garlic, roughly chopped
leaves of 1/2 bunch parsley
1/4 cup walnuts
pinch of salt and pepper
1/4 cup extra virgin olive oil
 
1 oz parm cheese, grated (1/2 cup)

Instructions
Cut the stmes off the zucchini. Slice lengthwise with a mandolin into 1/8 inch slices. Spinkle each side with salt and pepper Heat the grill to high and do a quick sear of the zucchini, about 30-60 seconds.
In food processor, combine artichoke hearts, lemon zest, lemon juice, garlic, parsley, walnuts and big pinch of salt and pepper. Let the food processor run at least 20 seconds until everything is chopped up. Slowly stream the olive oil in while processor is running. Remove from processor and add parm cheese.
Place a spoonful of the pesto into each zucchini ribbon and roll up.
