     Cuban Black Beans and Rice

Ingredients
3 3/4 cups chicken broth
1 1/2 cups uncooked brown rice
1 large onion chopped
1 jalapeno pepper seeded and chopped
3 cloves garlic minced
2 tsp ground cumin
1 tsp salt
2 cans 15oz black beans drained and rinsed
1 tbsp lime juice
 

Instructions
Place broth, rice, onion, jalapeno, garlic, cumin and salt in crockpot. Mix, cover and cook on low 7 1/2 hours until rice is tender
Stir in beans and lime juice. Cover and cook 15 to 20 minutes or until beans are heated through.
