     Cheddar Jalapeno Biscuits

Preptime   1/2 hr

Ingredients
1 3/4 c flour
2 tsps baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp sugar
6 tablespoons chilled butter cut into 1/2 inch cubes
2 tablespoons finely diced jalapeño pepper
2 tablespoons chopped chives
1/2 c grated sharp cheddar cheeses
 
3/4 c buttermilk

Instructions
Blend the 5 first dry ingredients. Add the butter and cut in with pastry knife or fingers until mixture is like a course meal.
Mix in jalapeño, cheese, and chives. Add buttermilk and gently toss util mixture is moist.
Gather dough and roll out into a rectangle on a floured surface, 1/2 to 3/4 inch thick. Cut into 21/2 inch squares.
Bake on parchment or silicone lined baking sheet at 400 degrees for 12 minutes. (I have a convection oven....use 425 for a standard oven.) Remove from oven when puffed and golden. Serve warm with bacon marmalade or as is.
