Preheat sauce pan with 1 ts olive oil on medium
heat. Add onions and cook for 8 minutes. Add
balsamic vinegar and stir frequently; cook for
another 2 minutes. Transfer to large bowl and set
aside.
Start boiling salted water for pearl pasta.
Reheat sauté pan with 1 Tb olive oil on medium
heat. Add garlic and thyme and cook for 1 minutes,
stirring frequently. Add mushrooms and cook for 6
minutes, stirring frequently. Stir in tomatoes,
cook for 2 minutes. Stir in soy sauce and cook 1
minute. Remove pan from heat and allow to cool.
Cook pearl pasta according to package directions.
Drain water and rinse with cool water if eating
cold, don't rinse if eating hot.
Combine all reserved ingredients together with
parsley, basil, cooked pearl pasta, salt and black
pepper and mix well. Dish can be served hot or
cold.
