Heat a pan add a nice big dollop of butter roast one peach till it is somewhat tender, add a little more butter ( or a lot more) a tsp of brown sugar and caramelize the peach. Don't over do it as it might become bitter.
Compote - take a cup of frozen mixed berries and 1/2 a cup apple juice or mixed fruit juice bring to a boil, sim for 15-20 min, add 1/3 cup sugar and sim for another 10 min, add the chili flake. Let it cool and refrigerate.
Take the caramelized peach and pour a generous helping of compote on it and garnish with fresh basil or mint, you can even serve it with some vanilla ice cream.
