     Zucchini Pineapple Bread

Servings   2 large loaf pans

Ingredients
2 cups of sugar
3 1/2 cups of flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
1 cup of oil
3 eggs
1 1/2 tsp. vanilla extract
 
1 can crushed pineapple, drained
1/2 cup of raisins
1 cup chopped nuts (walnuts suggested)
2 cups zucchini, grated

Instructions
1. Mix the flour, baking soda, baking powder, salt and cinnamon together. Beat the oil, eggs, sugar and vanilla together in a large bowl.
2. Add the zucchini and then dry ingredients to the wet mixture. Stir in pineapple, raisins and nuts.
3. Bake at 350ºF for about 1 hour or until a toothpick comes out clean.
