Arugula, Peach, and Goat Cheese Salad

3 medium peaches, ripe but not mushy
|
|
1 Tbsp. olive oil
|
|
1 Tbsp. red wine vinegar
|
|
1/4 tsp. salt
|
|
1/4 tsp. pepper
|
|
6 cups baby arugula
|
|
1/2 of a small onion, thinly sliced
|
|
1/4 cup of semi-soft goat cheese, crumbled
|
|
1.4 cup pistachio nuts. shelled and roughly chopped
|

Instructions |
|
|
1. Peel and pit one peach; cut into chunks. Cut the remaining
peaches into wedges and set aside.
|

|
2. Put the chunks from the one peach, oil, vinegar, salt and pepper
into a blender; blend until smooth.
|
|
|
3. Assemble the salad; drizzle dressing and gently toss. Sprinkle
with goat cheese and nuts.
