     Arugula, Peach, and Goat Cheese Salad

Ingredients
3 medium peaches, ripe but not mushy
1 Tbsp. olive oil
1 Tbsp. red wine vinegar
1/4 tsp. salt
1/4 tsp. pepper
6 cups baby arugula
1/2 of a small onion, thinly sliced
1/4 cup of semi-soft goat cheese, crumbled
1.4 cup pistachio nuts. shelled and roughly chopped
 

Instructions
1. Peel and pit one peach; cut into chunks. Cut the remaining peaches into wedges and set aside.
2. Put the chunks from the one peach, oil, vinegar, salt and pepper into a blender; blend until smooth.
3. Assemble the salad; drizzle dressing and gently toss. Sprinkle with goat cheese and nuts.
