     Dutch Oven Cheesy Potatoes

Ingredients
5 lbs russet potatoes, peeled and thinly sliced
8 slices bacon, chopped
1 large onion, diced
1 stick butter
salt and pepper
1 (16 oz) container sour cream
2 cups shredded cheddar cheese
 

Instructions
Slice potatoes thinly. Heat dutch oven over medium to high heat. Toss in 8 slices of bacon that have been chopped. When the bacon has cooked for a few minutes and there is a bit of grease in the bottom of the dutch oven, add the chopped onion. Let these two cook until the bacon is slightly crisp and the onions are almost translucent. add stick of butter. Stir it around and let it melt into the bacon and onions. Add the sliced potatoes. Give it all a nice stir and add salt and pepper. Put lid on potatoes.
Originally, I tried cooking this on the stove and it the potatoes took forever to get done. I will try it in the oven next time and cook for an hour at 350. Stir several times throughout to make sure it does not stick on the bottom.
When the potatoes are fork tender add the sour cream and give it a nice stir. Sprinkle 2 cups cheddar cheese over the top. Let it melt thru and it is ready to eat.
This recipe is to die for. Jerry says this is the only way he wants his potatoes from now on.
