     Frittata 4HB

Ingredients
6 eggs
half a red onion
1 small diced zucchini
1/2 cup chorizo sausage (or chicken or beef)
pinch of saffron
salt and pepper to taste
1 tsp oil
 

Instructions
heat oil in pan and cook onions for 5-7 minutes or until translucent. Chop up your zucchini and sausage or whatever else you are using. Add the zucchini and saffron to the pan and cook another 5 mins or so. Add the sausage or other meat and your salt and pepper and and reduce to medium-low. While the meat is cooking, whisk your eggs in a large separate bowl. Once the meat is done, add eggs to the pan and stir for 3-4 minutes until they resemble slightly runny scrambled eggs.
Dump everything from the pan back into the egg mixing bowl. Increase heat to medium-high and add some more oil or nonstick spray. After pan is hot/oil is heated, return egg mixture to the bowl (or half of it if you want to make two smaller frittatas as opposed to one large one.) Form into a large patty with a spatula as they cook. Cook for 2-3 minutes or until the sides of the frittata are firm enough to lift with a spatula without falling apart.
Now, flip the frittata to cook the other side. If it proves to difficult to do with a spatula, place a plate (larger than the frying pan) over the frying pan, hold tight, flip, then slide frittata back into the pan. Cook for another 2-3 minutes, flattening down with a spatula to ensure the frittata is uniform then remove from heat and let cool slightly before serving.
You can swap up the veggies, meat, and spices to alter this recipe according to your mood and tastes.
