     Beans (Habichuelas) in Puerto rican sauce

Ingredients
1 15oz pink or red beans, including juice in can
2 potatoes, cubed
reserve some orange water from potatoes
small can tomato sauce
2 packets sazon
1/2 c sofrito
1/4 tsp black pepper
handful of green olives, optional
1/2 tsp Italian seasoning
 

Instructions
In medium saucepan cover potatoes with water, add one packet of sazon and bring potatoes to boil. Cook 5-10 minutes until softened, pour off water, but reserve some to add back in.
To the cooked drained potatoes, add remainder of ingredients and stir. Add in some water to reach a saucy consistency. Bring mixture to boil then reduce heat and simmer 15-20 minutes. Serve over yellow or white rice.
