     Pumpkin Pancakes

Ingredients
2 cups whole wheat flour
1 cup unbleached flour
3/4 tsp salt
2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
3 Tbsp brown sugar
1 15oz can pure pumpkin puree
 
3 cups buttermilk
3 eggs

Instructions
In large bowl, mix all dry ingredients, combining well. Add pumpkin, buttermilk and eggs and mix gently. If batter seems stiff, add a little water so batter can be easily spooned onto griddle
Using a 1/3 measuring cup, pour onto hot griddle. Cook as you would regular pancakes.
Serving Suggestions
1 pancake = 75 calories and 4 g protein
