     Stuffed Potatoes

Ingredients
20 small, red potatoes
1 cup mayonnaise
1 cup sour cream
2 gherkin pickles, diced
2 medium celery stalks, diced
1 medium carrot, diced
3/4 tsp coars black pepper
4 scallions, diced (save tips for garnish)
2 TBSP fresh parsley
 
2 TBSP fresh dill

Instructions
Boil potatoes for 10-15 minutes, until soft. Allow to cool. Cut in half. Scoop out centers with a melon baller.
To scooped out potato, add remaining ingredients. Fill scooped out potatoes with mashed mix.
Serve cool.
