     Maple Grilled Salmon

Ingredients
1/4 c. maple syrup
1/4 c. cider vinegar
2 tbsp. vegetable oil
3 lbs. salmon fillet
1 lemon (juice and zest)
1/2 cucumber (grated and sqeezed dry)
1/2 c. mayo
1/2 c. plain yogurt
 

Instructions
Combine 1st 3 ingredients and marinate salmon for 2 hrs. Drain marinade into a pot to make cucumber dip. Add lemon juice and zest. Cook on medium heat and reduce sauce until thickened. Cool and whisk in remaining ingredients. Chill.
Preheat broiler. Place salmon skin side down on pan and broil for about 8 min. or until fish flakes easily.
