     Salmon with Caramelized Balsamic Onions

Ingredients
butter - 1 tbsp.
onion - 1 1 very large thinly sliced
Balsamic Vinegar - 1 tbsp
honey - 2 tsp.
Salt and pepper to taste freshly ground
salmon - 4 fillets (4 oz. to 6- oz.)
 

Instructions
Preheat oven to 400°F and spray a baking sheet with nonstick cooking spray. Melt butter in a large skillet. Separate onion rings and add to skillet. Cook over medium heat for 10 minutes, stirring frequently. Reduce heat to low and cook for 10 minutes more. Stir in vinegar and honey, then season with salt and pepper. While onions are cooking, rinse salmon and place on prepared baking sheet; sprinkle with salt and pepper. Bake for 10 to 20 minutes or until salmon is cooked to your liking; top with onions.
Prep time- 10 minutes, Cook time- 10 to 20 minutes
