     Creamy Squash Casserole

Ingredients
1 1/2 lb yellow squash, slice 1/4 inch
2 medium onions, chopped fine
1 4 oz jar of pimentos, drained and chopped
1 8 1/2 oz water chestnuts, thinly sliced
1 can cream of chicken soup
1 8oz carton of sour cream
1 stick of oleo
1 pkg herb stuffing mix
 

Instructions
Cook squash in salted water for 15 min; drain. Add next 5 ingredients and mix well. Melt 3/4 stick of oleo in skillet and add stuffing mix. Mix well. Pack into a 2 qt baking dish. Reserve some stuffing mix for top. Pour squash mixture over stuff mix and sprinkle remaining stuffing mix on top. Dot with remainder of oleo. Bake at 350 for 30 minutes.
