3-4 leaves (or more) of organic swiss, red, or rainbow chard; kale or any other green
Organic cheese - parmesan or cheddar (if desired)
Salt and pepper, to taste
Instructions
Wash and chop chard into small pieces, including some of the stem
for texture. Chop onion and garlic into fine mince.
Whip the eggs and splash of milk together until combined and
uniform.
Heat an iron skillet or non-stick pan to medium heat. Pour the
oil into the pan - not too hot so it doesn't smoke.
Cook the onion/garlic mixture for a few minutes - don't let it
brown.
Add the chard and sauté for a few minutes until soft. Add the
egg mixture over the finished chard, onions and garlic.
Lower the heat.
You can either cook like scrambled eggs or like an omelet until
cooked through to your liking.
Add cheese at this time (if desired) and fold in.
Salt and pepper to taste.
Enjoy with toast or a bagel and a nice cup of green tea.
