     Vegan Fajitas

Ingredients
1/4 c. olive oil
1/4 c. red wine vinegar
1 tsp. dried oregano
1 tsp. chili powder
garlic salt, salt, and pepper to taste
1 tsp. sugar
2 small julienned zucchini
2 small julienned yellow squash
1 large sliced onion
 
1 green bell pepper cut into thin strips
1 red bell pepper cut into thin strips
2 tbsp. olive oil
8.75 oz. can drained whole kernel corn
15 oz. can drained black beans

Instructions
In a large bowl combine olive oil, vinegar, oregano, chili powder, garlic salt, salt, pepper, and sugar. Add zucchini, yellow squash, onion, green and red peppers. Marinate vegetables in the refrigerator for at least 30 min. but not more than 24 hrs.
Heat oil in large skillet over medium-high heat. Drain the vegetables and saute until tender, about 10-15 min. Stir in the corn and beans. Increase the heat to high for 5 min. to brown vegetables.
