     Eggless Chocolate mousse

Ingredients
8 ounces high quality chocolate
3/4 cup water
 

Instructions
Melt chocolate in 3/4 cup hot water over medium heat; stir til smooth. Pour chocolate mixture into a bowl set over an ice bath, then beat with electric mixer until thick. Pour or spoon immediately into demitasse cups and let set. Maybe refrigerated. Garnish with whipped cream.
3 things that could go wrong- 1)If chocolate has too little fat, melt mixture again, add more chocolate and re-whip. 2)If mixture turns grainy, it is overmixed; remelt and begin again. 3)If mixture is too heavy, reheat and add a little more water. Re-whip.
