     Turkey Scallopini

Category   Entrees - Maindishes
Sub Category   None
Servings   4

Ingredients
1/3 cup flour
1/4 tsp dried rosemary, crushed
1/4 tsp dried thyme
1/8 tsp white pepper
1.25 lb turkey breast cutlets
4 tsp canola oil
1/4 cup white wine or chicken broth
1/2 tsp cornstarch
1/3 cup chicken broth

1/2 cup sour cream
1 tsp spicy brown mustard
Paprika (optional)

Instructions
•In a large resealable plastic bag, combine the flour, rosemary, thyme and pepper. Add the turkey; seal bag and shake to coat. In a large nonstick skillet coated with cooking spray, cook turkey in oil over medium heat for 2-4 minutes on each side or until no longer pink. Remove and keep warm.
Add wine to skillet; cook and stir for 30 seconds, stirring to loosen browned bits from pan. Combine cornstarch and broth until smooth; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until slightly thickened. Add sour cream and mustard; heat through. Pour over turkey; sprinkle with paprika if desired.
