     Tomato Sauce

Ingredients
¼ cup/60 ml – olive oil.
1 medium yellow onion – chopped fine.
4-6 center stalks of celery, include leafs, chopped fine.
1 tbsp/15 ml-dried oregano leaved.
3-4 large garlic gloves-minced.
5.5oz/156 ml – tomato paste.
¼ cup/60 ml – chopped fresh parsley.
100 oz./2.84 L – canned plum tomatoes-pureed.
1 tsp/5ml-dried basil leaves.
 
1 tbsp/15ml-table salt.
1 tbsp/15ml- group black pepper.

Instructions
Heat olive oil in a large pot; add chopped onion and celery. Sauté until clear. Add oregano leaves and garlic and sauté for 1 minute. Stir in tomato paste and sauté for about 2-3 minutes longer, careful not to burn at this stage but browning is good! Stir in parsley, pureed tomatoes, basil, salt and pepper.
Bring tomato sauce to a boil and reduce to simmer for one hour. Season to taste, turn burner off and let sit on stove until ready to dress your pasta or lasagna.
Serving Suggestions or Tips-
Add chicken pieces or pork side ribs, before direction 3 and sauté. The meat adds flavor and takes the acidic out of tomatoes and makes the meat very tender. Tomato sauces are personal and each family can add more or less of any ingredient to meet their family needs. Freeze sauce in 500ml containers for quick pasta dinners for two.
