1 red bell pepper, cleaned & chopped

1 kirby/persian cucumber peeled

¼ red onion, chopped

4 oz extra virgin olive oil

1.5 oz. jerez vinegar
|
|
4 oz water
|

salt and pepper

2 small garlic cloves

pinch ground cumin

Instructions |

|
Clean, cut out core at top and chop the tomatoes,bell pepper,cucumber and onion.
|

Soak bread in water, then squeeze out excess.
|

mix all ingredients and put in blender, add olive oil, jerez vinegar and water.
|
|
|
DAY OF SERVICE- add garlic paste with cumin, salt and pepper, blend well with stick mixer.
Garnish with micro basil and basil/parsley oil.
