     CHILLED TOMATO GAZPACHO

Ingredients
3 tomatoes
2 cups day old bread (½ baguette)
1 red bell pepper, cleaned & chopped
1 kirby/persian cucumber peeled
¼ red onion, chopped
4 oz extra virgin olive oil
1.5 oz. jerez vinegar
4 oz water
salt and pepper
 
~ just before serving
2 small garlic cloves
pinch ground cumin

Instructions
Clean, cut out core at top and chop the tomatoes,bell pepper,cucumber and onion.
Soak bread in water, then squeeze out excess.
mix all ingredients and put in blender, add olive oil, jerez vinegar and water.
DAY OF SERVICE- add garlic paste with cumin, salt and pepper, blend well with stick mixer. Garnish with micro basil and basil/parsley oil.
Serving Suggestions
Garnish with micro basil and basil/parsley oil.
