     Applesauce Muffins

Servings   16 muffins
  fresh squeezed juice or water

2 C GF All purpose flour
1/2C - 3tbsp granulated sugar DIVIDED
1/2C - 3 tbsp packed brown sugar DIVIDED
4 tsp cinnamon DIVIDED
2 tsp baking powder
1 tsp baking soda
1 tsp xanthan gum
1/2 C applesauce
1/2 oil
1/2 apple cider
2 eggs
butter, optional

Preheat oven to 350, line a standard muffin tin with backing cups
Combine flour, 1/2 C of granulated and brown sugar, 3 tsp cinnamon, baking powder, baking soda and xanthan gum in a large bowl. Add applesauce, apple cider and eggs- mix well.
For the topping, stir together the remaining suagrS, cinnamon and butter-options with a fork until it clumps-
fill prepared muffin cups about 2/3 full with batter. Sprinkle with topping. Bake on center rck for 25-30 mins. Pull out and let cool and enjoy.
