1 chicken breast, cooked & shredded
|
|
1/3 C black beans, drained & rinsed
|
|
1/3 C corn
|
|
1/4 C green onions, chopped
|
|
1/4 C tomatoes, diced
|
|
1/4 tortilla-like chips, crushed- I use a flax & chia or sweet potato style tortilla chips
|
|
2 tbsp white vinegar
|
|
2-3 tbsp plain low fat greek yogurt (you can use mayo but i use greek yo for everything)
|
|
2-4 avocados, sliced & pitted
|

Instructions |

|
Combine the chicken, beans, corn, onions, tomatoes, cilantro, and
tortilla chips into a medium bowl.

Add the vinegar & greek-yo or mayo. Mix until well combined.
|
|
|
Now you can do 2 things- Stuff mixture on top of the halved
avocado or you can mash or even dice up the avocado and mix into
the mixture and enjoy!
