     Salad- Cashew Thai Quinoa w/Ginger Peanut Dressing

Ingredients
1.5 c. water
3/4 c. quinoa
1 red bell pepper, seeded and diced
1/2 red onion, diced
1 c. shredded red cabbage
1 c. shredded carrots
1/2 c. chopped cilantro
1/2 c. cashew halves
1/4 c. diced green onions
 
Fresh lime
DRESSING
1/4 c. peanut butter
1 T. honey
2 tsp. freshly grated ginger
3 T. soy sauce
1 T. red wine vinegar
1 tsp. sesame oil
1 tsp. olive oil

Instructions
In medium saucepan, bring water to a boil. Add quinoa and bring to a boil. Cover pan, reduce heat to low and let simmer 15 mins. or until quinoa has absorbed all of the water. Remove pan from heat and fluff with fork. Place in large bowl and set aside to cool for about 10 mins.
Make dressing- Put peanut butter and honey in microwave-safe bowl. Heat for 20 seconds. Add rest of ingredients and stir until mixture is smooth and creamy. If you want thinner dressing, add a teaspoon or two of water or olive oil.
Fold veggies into quinoa. Garnish with cashews and green onions.
Serve chilled or at room temperature with lime wedges.
