     Simple Chicken Cutlets

Ingredients
Any size package of boneless chicken breasts (cutlets)
olive oil
lemon juice
salt
pepper
 

Instructions
Lay cutlets on foil or plate and add salt and pepper to one side. Pat with fork or back of spoon so salt and pepper will stick. Put chicken cutlets in a zip lock bag. Add about 1 teaspoon olive oil per cutlet (doesnst have to be exact). Add about 1/2 the lemon juice to oil. Zip up bag and can refrigerate a minimum of 10 minutes or can put in refrigerator in morning and cook at night.
Stove top cooking- Spray pan with PAM. Set heat to medium high and put cutlets in pan. Watch temperature so cutlets brown but dont burn. If starting to get too brown, turn down heat and/or add some water to pan. Cook about 8-10 minutes on medium high heat. Turn and cook about 8-10 minutes on other side. Timing will depend on thickness of chicken. When you think its done, cut thickest piece in half and check that there is no pink. MAKE SURE WHEN COOKING CHICKEN TO USE DIFFERENT UTENSILS WITH UNCOOKED CHICKEN VERSUS COOKED CHICKEN, AND WASH ALL UTENSILS AND PLATES WELL WITH HOT WATER AND SOAP.
