1) In a large bowl combine the orange juice, jerk
seasoning, lime juice, 3 Tbsp of the oil, soy sauce,
and jalapeno. Add shrimp and turn to coat. Cover and
marinate in the fridge for 10-20 minutes.
2) Meanwhile, heat 1 Tbsp. of oil in a large
skillet over medium-high heat. Add the broccoli
and cook, shaking the pan occasionally, until
starting to brown, but still a little crisp, 3-4
minutes. Transfer to bowl and set aside. Add
another Tbsp of oil and add the red pepper and
pineapple; cook, shaking the pan, 2-3 minutes. Add
to broccoli. Add another Tbsp of oil to skillet.
Add sweet potato and carrot and cook, shaking the
pan, 3-4 minutes or until crisp-tender. Heat
another Tbsp of oil. Strain the shrimp, discarding
the marinade, and cook in pan until pink, about 3
minutes. Return the vegetable mixture to the pan
and stir until heated through.
3) Serve immediately over rice. Season with salt and
pepper to taste.
