     Onion Soup

Ingredients
1/2 stick butter
1/4 C olive oil
6 thinly sliced onions
3 cans Campbell's chicken broth
3 cans water
Gruyere cheese slices
French bread slices, buttered and dried in oven
 

Instructions
Melt butter and oil in cast iron Dutch oven or heavy stockpot. Add onions, separated into rings. Toss to coat onions. Cover to smother onions about 30 min. Uncover and saute as onions cast off liquid. Continue for hours, stirring. Continue until onions are browning. Continue until onions are the color of caramel.
Add 3 cans of broth and 3 cans of water. Add pepper to taste. Laddle into oven-proff bowls. Float French bread rounds on top. Top with Gruyere cheese. Bake at 400 until cheese browns.
