     Best Ever Mac & Cheese

1/4 cup olive oil
3 cups macaroni or shell pasta
1 cup cottage cheese
1-2 cup shredded cheddar cheese
sliced American cheese, to thicken
1 stick butter
1/2 cup whole milk or heavy cream
1 tsp onion powder or 1 tbl grated fresh onion
salt & pepper to taste
1/3 cup more shredded cheddar cheese

In medium pot, boil 6 cups of water with 1 tbl salt and 1/4 cup olive oil. When water boils, add pasta and cook until tender. Drain pasta and rinse with hot water
Using a double boiler, melt butter and milk. Whisk, stirring occasionally until butter mixes with the milk. Slowly add 3 cups shredded cheddar and stir until it is melted and thickened. Add American cheese, slice by slice to desired thickness. When all is melted together, put pasta in bowl and add cheese sauce, cottage cheese, onion powder or grated onion, and salt and pepper to taste.
Stir all ingredients together well and spoon into a greased casserole dish. Top with remaining cheddar cheese and sprinkle with paprika.
Wrap casserole dish in plastic wrap, then cover tightly with aluminum foil. Cook at 350 for 30 minutes. When uncovered, the mac and cheese should be bubbling.
